Cherry Mozzarella Salad
150g Cherries, pitted
90g Parma Ham, torn
250g Mozzarella, torn
4 handfuls of Rocket
1 Lemon, zest &
1 tbsp of juice only 1 tbsp Balsamic Vinegar
3 tbsp Olive Oil
1. Crush cherries with the back of a fork in a bowl.
2. Arrange salad ingredients on plates.
3. In a screw-top jam jar shake together dressing ingredients. Dress salad. Serve immediately. Also suitable for packed lunches.
